Project 52 - Details

Here is my Project 52 photo for the week.  This week's theme was Details.  The dogwood and azaleas in our yard are in full bloom already!  I love the "details" of dogwood flowers...

Our Favorite Banana Bread

Our family loves to eat banana bread for breakfast.  This is our very favorite recipe.  It is always moist, and it freezes well.  So if you have a few overripe bananas that you need to use up, try this recipe out!

Banana Bread
(recipe source: Southern Sideboards)

1/2 cup oil
1 1/2 cups sugar
2 eggs, well beaten
1/4 tsp salt
1 1/2 cups sifted flour
1 tsp baking soda
1/3 cup buttermilk (or sour cream)
3 very ripe bananas, mashed
1 cup walnuts, chopped

Cream oil and sugar; add eggs and salt and mix well.  Add flour and soda combined with buttermilk alternately.  Add bananas.  Fold in nuts.  Grease 2 regular size loaf pans; pour in mixture and bake approximately 45 minutes at 350.  When bread leaves sides of pan and toothpick comes out clean, bread is done.
Makes 2 loaves.

Spring Break in Jackson

Over Spring Break we took the kids to visit Lee Lee, Doc and Uncle David in Jackson.  The weather was beautiful, and we had a great time with our family!

On Thursday we went to the Mississippi Children's Museum.  It is a lot of fun, and the kids loved showing us around.

On Friday we went to the reservoir to play with the dogs, kayak, play baseball and kayak with Doc.

That afternoon we went to see The Lorax.  Our visits are always too short, and we miss them already!

Mamie's Cupcakes

Mamie got a cute Bella mini cupcake maker for Christmas.  She wanted to make some this week and chose the Funfetti cake mix.  I let her make them completely by herself.  She was so proud of how they turned out!

What I've Been Reading

Starred Photos1

Spring Break is here, and I thought some of you might be looking for a good book to read.  Here are some books that I have enjoyed reading this year.  (I have actually read some others that I wouldn't necessarily recommend.)  Here is my choices are personal, so be sure to see what they are about before you read them. A couple of these are very realistic and some of the stuff can be "gritty" and hard to read. Happy reading!

Sidewalk Chalk

Griffin has two weeks off for Spring Break.  Margaret has been his shadow and has been so happy to have a playmate all day long. Last week they played with some cool 3-D sidewalk paint and chalk.
