Our Favorite Banana Bread

Our family loves to eat banana bread for breakfast.  This is our very favorite recipe.  It is always moist, and it freezes well.  So if you have a few overripe bananas that you need to use up, try this recipe out!


Banana Bread

1/2 cup oil
1 1/2 cups sugar
2 eggs, well beaten
1/4 tsp salt
1 1/2 cups sifted flour
1 tsp baking soda
1/3 cup buttermilk (or sour cream)
3 very ripe bananas, mashed
1 cup walnuts, chopped

Cream oil and sugar; add eggs and salt and mix well.  Add flour and soda combined with buttermilk alternately.  Add bananas.  Fold in nuts.  Grease 2 regular size loaf pans; pour in mixture and bake approximately 45 minutes at 350.  When bread leaves sides of pan and toothpick comes out clean, bread is done. 
Makes 2 loaves.

  2. I add a tablespoon of homemade vanilla extract for just a touch of depth of flavor. Just as a variation. At Christmas time I add cinnamon an a touch of nutmeg. It is such an amazing recipe! Thank you for posting this
