Fresh Apple Cake

I made this Apple Cake over the weekend to take to a dinner party.  It is one of my favorite fall desserts.  I found it in Southern Living a couple of years ago.  You can choose from three different frostings.  I have always made it with the Browned-Butter Frosting.  It's a great fall recipe, and I hope you will enjoy it as much as I do!

Fresh Apple Cake

1 1/2 cups chopped pecans
1/2 cup butter, melted
2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 1/2 pounds Granny Smith apples (about 4 large), peeled and cut into 1/4-inch-thick wedges

Directions:
Preheat oven to 350 degrees. Bake pecans in a single layer 5-7 minutes or until lightly toasted and fragrant, stirring halfway through.

Stir together butter and next 3 ingredients in a large bowl until blended.

Combine flour and next 3 ingredients; add to butter mixture, stirring until blended. Stir in apples and 1 cup pecans. (Batter will be very thick, similar to a cookie dough.) Spread batter into a lightly greased 13- x 9-inch pan.

Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack (about 45 minutes). Spread your choice of frosting over top of cake; sprinkle with remaining 1/2 cup pecans.
Yields: 12-15 servings


Browned-Butter Frosting
(recipe source: Southern Living)

1 cup butter
1 (16-oz.) package powdered sugar
1/4 cup milk
1 teaspoon vanilla extract

Directions:
Cook butter in a small saucepan over medium heat, stirring constantly, 6 to 8 minutes or until butter begins to turn golden brown. Remove pan from heat immediately, and pour butter into a small bowl. Cover and chill 1 hour or until butter is cool and begins to solidify.

Beat butter at medium speed with an electric mixer until fluffy; gradually add powdered sugar alternately with milk, beginning and ending with powdered sugar. Beat mixture at low speed until well blended after each addition. Stir in vanilla.

Fall Family Football

The weather was so nice here over the weekend, so Richie took the kids outside for a family football game.

The American girl dolls were brought out to cheer on the girls.

Project 52 - Birds/Flying

The theme for this week's Project 52 is Birds/Flying.  I waited around for birds for as long as I could, but all Griffin and I could find were bees and this one butterfly which he promptly scared off (and that is why it is out of focus)...oh well.  This was a hard theme!

Family Day - Downtown

On Saturday we spent the whole day downtown as a family.  It was Downtown Museum Day in Memphis!

We started out the morning with some coffee at Starbucks.

Our first stop was a visit to Sun Studio.  We loved learning the history behind Memphis music, and seeing the recording studio and instruments.  It was a very entertaining tour.  We also bought the kids a moon pie to try because they had never had one!

Next we had lunch at Flying Fish (one of our family favorites)!

Our next stop was The Cotton Museum. It was a small museum and it didn't take us long to go through, but it provided a good look into the history of cotton in this region.

We had some frozen yogurt at Dream Berry for an afternoon snack and watched the trolleys go by.

Our last stop was the Metal Museum.  It was a really cool museum set on a beautiful grounds that overlook the river.  They have a lot of metal garden art pieces that we loved looking at.  We also got to watch two blacksmith demonstrations.  The second blacksmith gave Margaret the hook that he was making.  She was so proud of it and carried it around the rest of the afternoon.

We had such a fun family day!  The kids came away saying that Sun Studio and the Metal Museum were their favorite parts of the day.
