Thanksgiving 2012
We spent Thanksgiving with my family in Jackson this year. The weather was warm and beautiful, the food was delicious and the family time was wonderful!

November Happenings
I have not been that great about posting lately, so this is just a random mixture of some things we have had going on lately.
Griffin and Margaret formed a band called the Double 05 Band. They made their own instruments out of things in Griffin's room, and this is their hit song.
Mamie was in a play at school. They had to update a Shakespeare play and do a modern twist on it. She did a great job, and loves being on stage (she did not get that from me)!
Margaret had a Thanksgiving Pow Wow program at school.
Margaret lost her very first tooth!
Griffin is learning how to play the guitar.
Mamie got some new skates, and she and Margaret have been practicing in the driveway.

Project 52 - Harvest/Autumn
The theme for this week's Project 52 is Harvest/Autumn. These are some pictures of the crepe myrtle tree in our back yard. Fall is my favorite season! I just love all of the colors of the changing leaves.

Pumpkin Pancakes
Here is a yummy recipe for pumpkin pancakes that I tried out last week. The recipe makes a lot of pancakes. We had enough for several breakfasts. If I make them again, I would freeze half of the batch for a quick easy breakfast. Enjoy!
Pumpkin Pancakes
(recipe source: adapted slightly from High Heels & Grills)
Ingredients:
3 cups flour
3/4 tsp. salt
2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg (optional, I didn't add)
1/4 tsp. ginger (optional, I didn't add)
3 Tbsp. brown sugar
1 (15 oz) can pure pumpkin
3 cups low fat buttermilk
3 eggs
syrup (for serving)
Directions:
In a large bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, ginger, and brown sugar, combining well. Add pumpkin, buttermilk, and eggs to dry ingredients and mix gently. (I added a little bit of milk to thin out the batter some.) Heat griddle to medium heat. Scoop 1/3 cup of batter onto griddle and let cook until lightly browned, about 3 minutes. Flip and let other side cook until lightly browned.
